Lucia Cunanan, (nee Lagman), was born in Tarlac in the 1920’s. She established Aling Lucing’s restaurant in Angeles City, Pampanga in 1974. This led to the modern day sisig being reinvented by Lucia “Aling Lucing” Cunanan, and establishing Angeles City as the “Sisig Capital of the Philippines”.
